Deliciously Organic Salted Caramel CupcakesOriginal Recipe Organic and whole wheat with deep caramel flavors, delicious frosting and yummy bits of fleur de sel. mmmm....
INGREDIENTS3 1/4 cups fresh milled whole wheat flour
2 teaspoons baking powder
1 teaspoon coarse ground Celtic sea salt or fleur de sel
2 tablespoons molasses
2 sticks butter, softened
1 1/2 cups rapadura (found at most health food stores...it's unprocessed sugar)
2 eggs and 1 yolk, at room temperature
1 teaspoon vanilla
1/2 cup sour cream
Caramel:
1 cup rapadura
1/2 cup water
2 tablespoons butter
1/4 teaspoon coarse ground Celtic sea salt
Frosting:
6 ounces cream cheese, room temperature
3/4 cup caramel (recipe below)
3/4 cup heavy cream, whipped to soft peaks
DIRECTIONSPreheat oven to 350 degrees and line muffin tin with cupcake liners (I like to use "if you care" unbleached muffin liners).
Over a large bowl sift the flour.

I had this dessert at a dinner party while I was in New York: clockwise starting from cookie: specialty chocolate chip cookie imported from a Chicago bakery, ripe anju pear, dark chocolate chunk, mascarpone gelato, fresh mango, and dessert wine.
