Cookies for Ice cream Sandwiches

For dessert, I wanted to fix the ever popular ice cream sandwiches, but I am too lazy to bake the cookies that Yum suggested, so I went a different route.

Cookie Recipe:

1 oz pkg of cake mix (any flavor)
½ cup butter, softened
1 egg

Preheat oven to 350 degrees

In a large bowl, combine all ingredients at low speed until dry ingredients are moistened and dough is thoroughly mixed.

Drop dough by rounded tablespoons full 2” apart onto ungreased cookie sheet.

Bake at 350 for 9-12 minutes. Cool 2 minutes on cookie sheet, then transfer to cooling rack.

If using Chocolate cake mix, add 2 tablespoons water along with the egg.

My notes:

I used Devils Food cake mix
I lined my cookie sheet with aluminum foil for easier cleanup
I also lightly sprayed my foil with some nonstick cookie spray
The cookies taste similar to a brownie, but they were still really good!
You can add additional goodies to this if you’d like. Chocolate chips, M&Ms, chopped nuts, peanut butter chips, whatever else might sound good!

Matt didn’t want to wait for the ice cream to go into the cookies, so he had just chocolate cookies and milk for dessert!
